Vegan Peach Cobbler with Whipped Cream

1 can sliced peaches in heavy sauce

¾ cup pure cane sugar

½ cup country crock spread

1 teaspoon cinnamon

3 whole cloves

½ teaspoon cornstarch

1 package Pillsbury Croissant Rolls


In a saucepan, add peaches and cut into smaller pieces. Add sugar, country crock spread, sugar, cinnamon, and cornstarch. Bring to a boil, then reduce heat then add cloves. Let simmer on low heat for 20-30 minutes.

Preheat the oven and cook croissant according to the package.

Once croissants are done, remove and pour cooked peaches and sauce over the croissants, place back in the oven for an additional 10-12 minutes.


1 can full fat coconut milk (refrigerated until solid form)

¼ cup powdered sugar

1 teaspoon vanilla

Place solid milk in a mixing bowl, mix until cream forms, add powdered sugar and vanilla. Whip until it thickens. Add dollop to serving of cobbler.
